Groundhog Day Eve

A warm springlike day with breezes; seemed like a March Day that was made for kites and a long walk. The political hype clogs the media. I fear the Groundhog may not even come out to see if he can see his shadow. We are promised some rain and then a return to more seasonal weather. Eating local becomes more of a challenge as the storage vegetables are dwindling. This simple and colorful salad hardly needs a recipe. Shredded local spinach, roasted butternut squash, red quinoa, perhaps some toasted sunflower seeds, goat cheese if you wish. All available at the Mill Spring Farm store...fresh, local, and simple. Taste the difference!
