Keep your hands out of the chips....you know you can never eat just one...This is the simplest recipe...and good for you too! Grab some local eggs out of the cooler at the Farm Store...Farmers that are committed to raising healthy chickens to bring you FRESH eggs. I just finished eggs from Happy Hens-just one of the local providers. Hard boil the eggs, peel them and stuff them with your favorite hummus...we have Roots Hummus in the cooler....or you can make your own. We have organic chickpeas at the store too! Soak them and cook them add lemon juice, spices and tahinni.
12 hard boiled eggs, peeled
1 ½ cups low fat hummus
Paprika and Italian parsley, to garnish
Instructions: Cut eggs in half lengthwise. Remove the egg yolks to a small bowl and reserve for another use. Fill each egg white shell with a tablespoon of hummus and sprinkle lightly with paprika and garnish with parsley. Cover lightly with plastic wrap and refrigerate for up to one day before serving.
Serves: 12 (each serving = 2 halves)
