Business Expo Soup - Chickpea, Kale and Sweet Potato

A BIG thank you to all who came by the business expo last Saturday. It was a great time seeing old friends and making new ones.


And for those who wanted the recipe for the soup we were sampling, here it is.


While it does not have a name or exact amounts you can make it your own; just call it what you will but know you can get all the ingredients here.


  1. Cook chickpeas until almost soft (can use canned)

  2. 1 lb.(+/-) hot sausage - brown and set aside

  3. saute diced onion and minced garlic in olive oil until soft

  4. add chicken broth (if available) and water

  5. add peeled and diced sweet potato

  6. add chick peas and diced kale

  7. salt and pepper to tastebring to boil - reduce heat to simmer for 30 minutes

  8. add sausage. Bring back to boil. Ready to serve.


Added Rutabaga this week so the next recipe is an easy and nutrious way to serve this often over looked root vegetable.


Roasted Rutabaga
  1. Peel and cube rutabaga, toss in small amount of olive oil.

  2. Spread on a lined sheet pan and sprinkle with sea salt and pepper.

  3. Cook at 425 for about 40 minutes until golden and soft.

  4. Before serving toss in 1 tsp of apple cider vinegar and sprinkle with parsley.
