Valentines Day Desssert - Chocolate-Covered Cheesecake Strawberries

  • 1-1/12 lb strawberries

  • 4 oz. light cream cheese, at room temperature

  • 1 Tblsp powdered sugar

  • 1 tsp vanilla

  • 1 cup dark or semi-sweet chocolate chips

  • Optional: crushed graham crackers, chopped nuts, and/or sprinkles

  1. Remove hull from strawberries and using a paring knife, cut out a slightly larger cavity into the strawberry.

  2. In small bowl combine light cream cheese, powdered sugar and vanilla, stir until smooth.

  3. Using a piping bag or a plastic bag with tip cut off, pipe the cheesecake filling into the strawberry.

  4. Place strawberries in refrigerator for at least 30 minutes to chill and firm filling.

  5. Melt the chocolate in microwave ( 15 seconds at a time until melted) or over a pot of simmering water.

  6. Dip the cheesecake end into chocolate, then into graham crumbs, nuts or sprinkles if desired.

  7. Stand up on the chocolate dipped end on waxed paper.

  8. Store in refrigerator until serving.
